Our Banana Bread is perfect for breakfast with a slab of butter or great as an afternoon snack. It's not too sweet with the right banana flavor.
1/3 c. shortening (or oil)
1/2 c. sugar
2 eggs
1 3/4 c. flour
1 t. baking powder
1/2 t. baking soda
1/2 t. salt
1 c. mashed ripe bananas
Preheat oven to 350 degrees. Place an 8x4x2 cast iron loaf pan in oven while preheating.
In a mixing bowl, cream together shortening and sugar. Add eggs one at a time and mix well. In a separate bowl, combine flour, baking powder, baking soda and salt. Add to creamed mixture, alternating with bananas, beating after each addition.
Remove preheated pan from oven and carefully add 1 to 1 1/2 T. butter to pan. Tilt pan so butter fills the bottom of the loaf pan. Pour batter into the center of the pan. (The butter will spread up the sides as the batter fills the pan. This gives the loaf a nice, golden crust and the bread slides right out of the pan when done.)
Bake at 350 degrees for 30 minutes. Toothpick inserted into the middle should come out clean. Cool on rack for 10 minutes then remove loaf from pan. Delicious served warm with butter.
