Cast iron brownies go QUICK with our family.
Here's how we make the
Ultimate Cast Iron Brownies
(Makes 16)
Ingredients:
1/2 c. butter
2 squares (2 oz.) unsweetened chocolate
1 c. sugar
2 eggs
1 t. vanilla
3/4 c. all-purpose flour
1/2 c. chopped walnuts (optional)
Instructions:
1. Preheat oven to 350 degrees.
2. Grease a #7 cast iron skillet* (or an 8x8x2-inch baking pan.)
3. Melt butter and chocolate.
4. Remove from heat; stir in sugar.
5. Add eggs and vanilla; beat lightly just until combined (don't over beat or brownies will rise too high, then fall.)
6. Stir in flour and nuts.
7. Spread batter in pan and bake for 30 minutes or until toothpick comes out clean.
8. Cool completely.
9. Remove from pan and cut into bars.
* Using the #7 cast iron skillet results in a thin brownie. For thicker brownie, use a smaller skillet and adjust cooking time. We sometimes save some batter for one of our tiny skillets because it makes a small crunchy brownie and frankly it's fun to play with mini skillet recipes.
