Pineapple Upside Down Cake

1/2 cup (1 stick) butter 1 cup packed brown sugar 1 (20 oz) can pineapple slices Maraschino cherries 1 pkg Duncan Hines® Moist Deluxe® Pineapple Supreme Cake Mix 1/3 cup oil 1 cup water (or use pineapple juice from the canned pineapple) 3 eggs   Preheat oven to 350 degrees F.  Add the butter and brown sugar to a #10 cast iron skillet and place pan in oven while preheating.     Prepare cake mix according to the package.  Arrange pineapple slices and cherries on top of brown sugar.  Pour batter over pineapple and cherries in pan.   Bake for 40 minutes...


Grandma's Apple Crumb Pie

Grandma Cauble used to make this delicious pie using a recipe she clipped from Better Homes and Gardens Magazine, October 1955.  It's a family favorite! 5 to 7 Golden Delicious apples (I’ve used Gala and Macintosh as well) 1 – 9” unbaked pie crust (fits nicely in a #8 cast iron skillet) ½ c. sugar 1 t. cinnamon ½ c. sugar ¾ c. flour 1/3 c. butter or Oleo (I use butter)   Pare and slice apples in crust.  Combine the ½ c. sugar and cinnamon; sprinkle over apples.   Combine ½ c. sugar and flour; cut in butter until crumbly. ...


Howlin' Hush Puppies

These hush puppies (or fritters) are quick, easy and naturally gluten free. 1 c. stone ground  cornmeal 1 t. baking powder 1/2 t. salt 1 fresh red or green jalapeno, finely chopped 1 small onion, finely chopped 1 lg. egg 1/2 c. Half-n-Half   Mix all ingredients.  Drop by spoonful's into deep fryer or hot oil (a cookie scoop works great.)  Cook 3-4 minutes, flipping half way.  Remove and drain on paper towel.      Makes 12 large fritters.


Mexican Lasagna (Layered Enchilada Bake)
