Crusty No-Knead Bread

The easiest bread to make!  Works great in a cast iron dutch oven. 3 cups flour1 tsp salt½ tsp yeast1 ½ cups warm water In a large bowl, stir all ingredients together and cover with plastic wrap. Let dough sit for 8-24 hours.  Remove dough and use floured hands and surface to form dough into a ball.  Let rest for 30 min. Preheat oven to 450 degrees with the Dutch oven inside.  After dough has rested, remove pan and add dough.  Bake covered for 30 minutes, remove the lid and bake another 10 minutes. *You can add a little bit...


Brisket Baos

This is the recipe for the baos we've been making on the Big Green Egg at a couple of festivals recently. The creator and owner of Crisbee, Bradley, has been creating some phenomenal versions of this traditional Chinese bao, (a steamed, stuffed bun also referred to as "baozi") and here is one of the recipes that has been consistently drawing crowds. Dilly Sauce

This is a sauce we've been enjoying after serving it at our booth at the 2018 North Florida Eggfest.  We were blown away by how many people wanted to take some home.  Here's how we did it so you can make your own: 8 ounces sour cream 3 tsp dill weed 1/2 tsp onion powder 1/2 tsp garlic powder 2 tsp parsley 1/2 cup mayo ​Instructions: 1. Sweet Cornbread

2 tablespoons butter 1 cup all-purpose flour 1 cup yellow cornmeal 2/3 cup white sugar 1 teaspoon salt 3 1/2 teaspoons baking powder 1 egg 1 cup milk 1/3 cup vegetable oil   Preheat oven to 400 degrees F. Place 2 T. butter in a #8 cast iron skillet and heat pan in oven while it comes to temperature.    In a large bowl, combine flour, cornmeal, sugar, salt and baking powder. Stir in egg, milk and vegetable oil until well combined.   Remove skillet from oven and spread butter around.  Pour batter into the preheated skillet.  Bake for 20 to 25 minutes,...


Cast Iron Brownies

1/2 c. butter  2 squares (2 oz.) unsweetened chocolate  1 c. sugar 2 eggs 1 t. vanilla 3/4 c. all-purpose flour 1/2 c. chopped walnuts (optional)   Preheat oven to 350 degrees.  Grease a #7 cast iron skillet* (or an 8x8x2-inch baking pan.)  Melt butter and chocolate.  Remove from heat; stir in sugar.  Add eggs and vanilla; beat lightly just until combined (don't over beat or brownies will rise too high, then fall.)  Stir in flour and nuts.  Spread batter in pan and bake for 30 minutes or until toothpick comes out clean.  Cool completely.  Remove from pan and cut into bars.  Makes 16.    ...
